Baked Berry Puff

  • Makes: 8 servings  
  • Preparation Time: 15 minutes 
  • Baking Time: 25 minutes 

Ingredients

2 cups500mL fresh or frozen mixed berries

½ cup125mL Smucker’s® Pure Strawberry Jam

1 tsp5mL vanilla extract

Puff Batter

¼ cup50mL butter

6 eggs

1 cup250mL Carnation® Regular, 2% or Fat Free Evaporated Milk

1 cup250mL Robin Hood® All Purpose Flour

2 tbsp30mL sugar

1 tsp5mL vanilla extract

¼ tsp1mL cinnamon

Garnish

1 cup250mL fresh or frozen mixed berries

Icing sugar

Directions

  1 Sauce: Place berries and jam in a small saucepan. On low heat, simmer for 2-3 minutes. Remove from heat, stir in vanilla. Reserve.

  2 Preheat oven to 450ºF (232ºC). Place butter in a 10” (25cm) heavy ovenproof frying pan. (You can also use a 10”/25cm pie plate or baking dish). Place pan in oven until hot and butter is sizzling (about 8-10 minutes).

  3 Batter: While your pan is heating up prepare batter. Beat eggs until light and frothy. Add remaining ingredients. Beat until batter is smooth, about 3-5 minutes.

  4 Carefully, using a pot holder or oven mitt remove hot pan from oven. Immediately pour batter into pan and return to oven. Bake for 20-25 minutes until puffed and golden brown.

  5 Remove from oven. Puff will start to deflate after being removed from oven. Serve right from the pan or place on a serving dish. Top with berry sauce, sprinkle on fruit, sprinkle with icing sugar, cut into wedges and serve immediately. Puff will deflate.

Tip(s)

Impress your friends and family, bring the puff to the table directly from the oven in the pan.


Fruit sauce can be made a day ahead and reheated before serving.
