: Blend goat cheese, garlic, lemon zest and milk in a processor until smooth. Transfer to a small bowl. Serve as is or follow directions for the variations. Cover and refrigerate until dip is cold and flavours blend, about 3 hours.

: Goat Cheese and Herbed Dip: After preparing dip stir in 3 tbsp (45mL) chopped fresh chives and 1 tbsp (15mL) chopped fresh thyme. Add ¼ tsp (1mL) hot sauce if desired. You can replace the herbs with whatever you have on hand; parsley, cilantro or basil will work well.

: Goat Cheese and Sundried Tomato Dip: For another version stir in 2 tbsp (30mL) chopped sundried tomatoes and 2 tbsp (30mL) chopped fresh basil to the basic dip recipe.
