Tzatziki Salad Dressing

  • Makes: about 2 ¾ cups (675 mL)  
  • Preparation Time: 15 minutes 

Ingredients

1 medium seedless cucumber, peeled, seeded and grated

1/3 cup75 mL chopped fresh parsley

3 tbsp45 mL chopped fresh mint

3 tbsp45 mL chopped fresh dill

1 cup250 mL Carnation® Regular, 2% or Fat Free Evaporated Milk

1/2 cup125 mL mayonnaise

3 tbsp45 mL lemon juice or cider vinegar

2 tsp10 mL Dijon or grainy mustard

1 clove garlic, minced

3/4 tsp4 mL salt

1/4 tsp1 mL pepper

Directions

  1 In a bowl, combine grated cucumber, parsley, mint and dill. Stir in evaporated milk, mayonnaise, lemon juice, mustard, garlic, salt and pepper.

  2 Let stand 15 minutes, until thickened. Use immediately or cover and refrigerate for up to two days.
