Ingredients

  • 1 medium seedless cucumber, peeled, seeded and grated
  • 1/3 cup (75 mL) chopped fresh parsley
  • 3 tbsp (45 mL) chopped fresh mint
  • 3 tbsp (45 mL) chopped fresh dill
  • 1 cup (250 mL) Carnation® Regular, 2% or Fat Free Evaporated Milk
  • 1/2 cup (125 mL) mayonnaise
  • 3 tbsp (45 mL) lemon juice or cider vinegar
  • 2 tsp (10 mL) Dijon or grainy mustard
  • 1 clove garlic, minced
  • 3/4 tsp (4 mL) salt
  • 1/4 tsp (1 mL) pepper

Directions

Step 1:

In a bowl, combine grated cucumber, parsley, mint and dill. Stir in evaporated milk, mayonnaise, lemon juice, mustard, garlic, salt and pepper.

Step 2:

Let stand 15 minutes, until thickened. Use immediately or cover and refrigerate for up to two days.
