Ingredients
- 1 medium seedless cucumber, peeled, seeded and grated
- 1/3 cup (75 mL) chopped fresh parsley
- 3 tbsp (45 mL) chopped fresh mint
- 3 tbsp (45 mL) chopped fresh dill
- 1 cup (250 mL) Carnation® Regular, 2% or Fat Free Evaporated Milk
- 1/2 cup (125 mL) mayonnaise
- 3 tbsp (45 mL) lemon juice or cider vinegar
- 2 tsp (10 mL) Dijon or grainy mustard
- 1 clove garlic, minced
- 3/4 tsp (4 mL) salt
- 1/4 tsp (1 mL) pepper
Directions
Step 1:
In a bowl, combine grated cucumber, parsley, mint and dill. Stir in evaporated milk, mayonnaise, lemon juice, mustard, garlic, salt and pepper.
Step 2:
Let stand 15 minutes, until thickened. Use immediately or cover and refrigerate for up to two days.
