Ingredients
- 2 cups (500 mL) Robin Hood® All Purpose Flour
- 2 cups (500 mL) grated Cheddar cheese, divided
- 1 tsp (5 mL) salt
- 1 can (354 mL) Carnation® 2% or Fat Free Evaporated Milk
- 1/2 cup (125 mL) water
- 4 eggs
Directions
Step 1:
Preheat oven to 350ºF (180ºC). Place 12 cup muffin pan in oven while it is heating up.
Step 2:
Combine flour, 1 cup (250 mL) grated cheese and salt in a large bowl.
Step 3:
Combine evaporated milk and water and heat to 125ºF/60ºC (approximately 1 minute on high in the microwave) and whisk with eggs. Add to flour mixture. Do not over mix. Don’t worry if there are a few lumps.
Step 4:
Remove hot pan from the oven. Spray with non-stick cooking spray. Put 1/3 cup (75 mL) batter into each cup. Sprinkle with remaining 1 cup (250 mL) grated cheese.
Step 5:
Bake in preheated oven 35-40 minutes until puffed and browned. Serve hot.
Tip
Use any of your favourite cheese. Just replace with the same amount.
