Potato Salad with Buttermilk Dressing

Ingredients

  • 2.5 lbs (1.2 kg) baby potatoes, scrubbed, skin on
  • 1 can (354 mL) Carnation® Regular, 2% Fat or Fat Free Evaporated Milk
  • 1/4 cup (50 mL) lemon juice
  • 1/4 cup (50 mL) mayonnaise
  • 2 cloves garlic, finely minced
  • 1/3 cup (75 mL) fresh dill, chopped
  • 1/3 cup (50 mL) green onions, finely chopped
  • 4 eggs (hard boiled, peeled and chopped)
  • 4 dill pickles, chopped
  • salt and pepper to taste

Directions

Step 1:

Boil potatoes in large pot until fork tender. Drain and rinse with cold water. Place in large bowl. Meanwhile, combine evaporated milk, lemon juice.  Set aside 5 minutes. Add mayonnaise, garlic, dill and green onions. Pour over potatoes and add remaining ingredients. Toss gently. Taste to adjust seasonings if necessary.
