Baked Berry Puff
Ingredients
- 2 cups (500 mL) fresh or frozen mixed berries
- 1/2 cup (125 mL) Smucker’s® Pure Strawberry Jam
- 1 tsp (5 mL) vanilla extract
- Puff Batter:
- 1/4 cup (50 mL) butter
- 6 eggs
- 1 cup (250 mL) Carnation® Regular, 2% or Fat Free Evaporated Milk
- 1 cup (250 mL) Robin Hood® All Purpose Flour
- 2 tbsp (30 mL) sugar
- 1 tsp (5 mL) vanilla extract
- 1/4 tsp (1 mL) cinnamon
- Garnish:
- 1 cup (250 mL) fresh or frozen mixed berries
- icing sugar
Directions
Step 1:
Sauce: Place berries and jam in a small saucepan. On low heat, simmer for 2-3 minutes. Remove from heat, stir in vanilla. Reserve.
Step 2:
Preheat oven to 450ºF (232ºC). Place butter in a 10” (25 cm) heavy ovenproof frying pan. (You can also use a 10”/25 cm pie plate or baking dish). Place pan in oven until hot and butter is sizzling (about 8-10 minutes).
Step 3:
Batter: While your pan is heating up prepare batter. Beat eggs until light and frothy. Add remaining ingredients. Beat until batter is smooth, about 3-5 minutes.
Step 4:
Carefully, using a pot holder or oven mitt remove hot pan from oven. Immediately pour batter into pan and return to oven. Bake for 20-25 minutes until puffed and golden brown.
Step 5:
Remove from oven. Puff will start to deflate after being removed from oven. Serve right from the pan or place on a serving dish. Top with berry sauce, sprinkle on fruit, sprinkle with icing sugar, cut into wedges and serve immediately. Puff will deflate.
Tips
Impress your friends and family, bring the puff to the table directly from the oven in the pan.
Fruit sauce can be made a day ahead and reheated before serving.
