Matcha Tofu Pudding

Ingredients
- 7 oz (200 g) soft tofu
- 1 tbsp (15 mL) matcha powder
- 2 tsp (10 mL) gelatin powder
- 2 tbsp (30 mL) boiling water
- 1 can (354 mL) Carnation® Regular, 2% or Fat Free Evaporated Milk
- 3 1/2 tbsp (52 mL) sugar
- Garnish:
- additional matcha powder for garnish, optional
Directions
Step 1:
Puree tofu in blender. Add matcha powder and mix well until smooth. Pour into medium bowl.
Step 2:
Combine gelatin and boiling water in small bowl. Stir to dissolve.
Step 3:
Brings milk and sugar almost to a boil over medium heat in a small saucepan, stirring frequently.
Step 4:
Add a small amount of hot milk mixture to tofu mixture. Stir. Pour in the remaining milk mixture and stir well.
Step 5:
Mix in gelatin, stir well. Pour through a strainer to remove any remaining lumps.
Step 6:
Pour into 5 (1/2 cups / 125 mL each) ramekins.
Step 7:
Refrigerate 3 hours, or until set.
