Family Night Skillet Dinner

Ingredients

  • 2 cups (500 mL) penne pasta, uncooked
  • 2 tbsp (30 mL) Vegetable or Canola Oil
  • 1 onion, chopped
  • 2 cloves garlic, finely chopped
  • 2 carrots, chopped (1 1/2 cups)
  • 1 red pepper, chopped (1 cup)
  • 1 cup (250 mL) frozen peas
  • 2 tbsp (30 mL) Robin Hood® All Purpose Flour
  • 1 can (354 mL) Carnation® Regular, 2% or Fat Free Evaporated Milk
  • 1 cup (250 mL) prepared tomato sauce
  • 4 cups (1 L) chopped cooked chicken
  • salt and pepper to taste
  • 1 cup (250 mL) grated Mozzarella cheese

Directions

Step 1:

Cook pasta as directed on package.

Step 2:

Heat oil in a large non-stick skillet on medium heat. Add onion, garlic, carrots, red pepper and frozen peas. Cook gently for 5 minutes or until tender. Add flour and cook for 3 minutes.

Step 3:

Stir in evaporated milk and tomato sauce. Bring to a boil, add chicken and pasta and cook until heated through. Season with salt and pepper. Stir in cheese until melted.
