Sloppy Joes with Sweet Potato Mash
Ingredients
- Sloppy Joes:
- 2 tbsp (30 mL) Vegetable Oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp (5 mL) chili powder or mild curry powder
- 1 lb (500 g) lean ground beef
- 2 tbsp (30 mL) Robin Hood® All Purpose Flour
- 1 cup (250 mL) tomato juice or sauce
- 1/4 cup (50 mL) Smucker’s® Apricot Jam
- 1 tbsp (15 mL) Worcestershire sauce
- 1 1/4 cups (300 mL) Carnation® Regular or 2% Evaporated Milk
- 1 cup (250 mL) fresh or frozen peas
- salt and pepper
- Sweet Potatoes:
- 2 lb (1 kg) sweet potatoes, peeled and cut into chunks
- 1/4 cup (50 mL) Carnation® Regular or 2% Evaporated Milk
- 2 tbsp (30 mL) butter
- 2 tbsp (30 mL) brown sugar or maple syrup
- 1/2 tsp (2 mL) salt
Directions
Step 1:
In a skillet, heat oil over medium-high heat. Add onion and garlic and cook 2 minutes. Stir in chili powder. Add beef and cook, breaking up until all pinkness disappears, about 4 minutes. Add flour and cook 1 minute.
Step 2:
Stir in tomato juice, jam and Worcestershire sauce. Simmer, uncovered, for 6 minutes. Add warmed evaporated milk, stirring to incorporate. Simmer 4 minutes. Add peas and cook 3 minutes. Season with salt and pepper.
Step 3:
At the same time, in a saucepan, cook sweet potatoes in a water to cover, until tender. Drain well and mash. Add evaporated milk, butter, sugar and salt. Mash until incorporated. Serve with Sloppy Joe mixture.
Tips
Replace ground beef with ground chicken or turkey.
Sloppy Joes can be covered and refrigerated one day ahead. Reheat over low heat.
