Ingredients

  • 3 cups (750 mL) tomato juice
  • 1 can (28 oz / 796 mL) diced tomatoes, undrained
  • 1 can (354 mL) Carnation® Fat Free Evaporated Skim Milk
  • 1/4 cup (50 mL) lemon juice
  • 2 tbsp (30 mL) olive oil
  • 2 cloves garlic, minced
  • 1 tsp (5 mL) each salt and black pepper
  • 2 medium English cucumbers, chopped
  • 1 medium green pepper, chopped
  • 1 small onion, chopped

Directions

Step 1:

Stir together tomato juice, tomatoes, evaporated milk, lemon juice, olive oil, garlic, salt, and pepper in large bowl. Transfer, in batches, to food processor or blender; process until smooth. Pour back into bowl. Stir in cucumbers, green pepper and onion. Refrigerate until chilled
