Onion Bisque with Ham and Cheese

Ingredients
- 2 tbsp (30 mL) Vegetable or Canola Oil
- 2 leeks, white part only, sliced
- 2 sweet onions, thinly sliced
- 2 cloves garlic
- 1/2 tsp (2 mL) dried thyme
- 3 cups (750 mL) vegetable or chicken stock
- 1 1/2 cups (375 mL) Carnation® Regular, 2% or Fat Free Evaporated Milk
- salt and pepper
- pinch cayenne pepper
- Garnish:
- 1/2 cup (125 mL) diced ham or Prosciutto
- 1/2 cup (125 mL) diced Swiss or Cheddar cheese
Directions
Step 1:
In a large saucepan, heat oil over medium heat. Add leeks, onions, garlic and thyme. Cover and cook 20 minutes, stirring occasionally, until very soft.
Step 2:
Add stock. Bring to a boil. Reduce heat and simmer for 10 minutes. Remove from heat. Purée with an immersion blender or food processor until smooth.
Step 3:
Stir in evaporated milk and reheat soup until hot but not boiling. Season with salt, pepper and cayenne. Serve, garnished with ham and cheese.
