Creamy Rice Pudding
Description: Rice pudding has been a favourite since the pioneers--an original comfort food, slow-cooked by the fire.

Prep Time:10 minutes
Cook Time:75-90 minutes

Ingredients Preparation
1 can[370 mL]Carnation® Evaporated Milk
1-1/3 cups[325 ml]water
1/2 cup[125 ml]long-grain rice
2 eggs
1/3 cup[75 ml]granulated sugar
1/4 tsp[1 ml]cinnamon
1/2 cup[125 ml]raisins
1 tsp[5 ml]vanilla
In heavy saucepan, combine evaporated milk, water and rice; cook, stirring, until boiling.  Reduce heat to low; cover and cook for 40 minutes, stirring frequently. 

In small bowl, beat together eggs, sugar and cinnamon; stir into hot rice mixture. Stir in raisins (if using). Cook, stirring, for 3 minutes or until thickened. Remove from heat; stir in vanilla. Serve warm or cool. 

Makes 4 servings

This is my grandmother's recipe.She always added a pinch of salt when cooking the rice/milk mixture, and so do I. I always double or triple the amount - sometimes adding raisin or sometimes not. I love this rice pudding, and whenever I make it, I can feel Nanny's love for us grandchildren shining through.
