| 1-1/3 cups | [325 ml] | water |  |
| 1/2 cup | [125 ml] | long-grain rice |  |

| 1/3 cup | [75 ml] | granulated sugar |  |
| 1/4 tsp | [1 ml] | cinnamon |  |
| 1/2 cup | [125 ml] | raisins |  |
| 1 tsp | [5 ml] | vanilla |  |

In heavy saucepan, combine evaporated milk, water and rice; cook, stirring, until boiling. Reduce heat to low; cover and cook for 40 minutes, stirring frequently.
In small bowl, beat together eggs, sugar and cinnamon; stir into hot rice mixture. Stir in raisins (if using). Cook, stirring, for 3 minutes or until thickened. Remove from heat; stir in vanilla. Serve warm or cool.
