: Whisk eggs and evaporated milk in a large bowl Stir in ½ cup (125mL) cheese, salt and hot sauce.

: Spray large skillet and heat over medium heat. Add egg mixture. Stir gently until moist curds form.

: Sprinkle 2 tbsp (30mL) grated cheese down center of tortillas. Place ½ cup (125mL) scrambled eggs on top of cheese. Fold up bottom of tortilla and roll up.
