Scrambled Egg Tortilla Wraps

  • Makes: 6 large tortilla wraps  
  • Preparation Time: 10 minutes 
  • Cooking Time: 5 minutes 

Ingredients

8 eggs

½ cup125mL Carnation® Regular, 2% or Fat Free Evaporated Milk

1 1/4 cups300mL grated cheddar cheese, divided

½ tsp2mL salt

1 tsp5mL hot sauce, optional

6 9”23cm whole wheat flour tortillas

Directions

  1 Whisk eggs and evaporated milk in a large bowl Stir in ½ cup (125mL) cheese, salt and hot sauce.

  2 Spray large skillet and heat over medium heat. Add egg mixture. Stir gently until moist curds form.

  3 Sprinkle 2 tbsp (30mL) grated cheese down center of tortillas. Place ½ cup (125mL) scrambled eggs on top of cheese. Fold up bottom of tortilla and roll up.

Tip(s)

Use any of your favourite cheese.


If you have extra time add chopped onions, peppers, mushrooms, tomatoes etc. to the eggs.
